PREFACE
Il est peu de livres desquels on puisse dire ce qu'on dira de celui-ci:
—Il manquait.
Et ce n'est pas un mince eloge a faire, des ces premieres pages, a l'oeuvre d'Auguste Helie.
Dans la masse d'ouvrages culinaires dont on lit les cinq mille titres dans le si curieux et si instructif Repertoire de Georges Vicaire (Bibliographie Gastronomique), quelques-uns a peine peuvent, par leur intention, lui etre rapproches. Par ses longs sejours a l'etranger, et particulierement en Angleterre, ou les plus aristocratiques tables furent dirigees par lui, tout ce qui pouvait etre innove a ete, par lui, tente et reussi.
C'est donc un ensemble complet d'experience et de savoir qui produit ce livre, et le public ne s'y trompera pas. Il se sentira a chaque ligne, guide avec une grace aisee, et soutenu avec force.
Je n'ai, en consequence, il me semble, aucun souhait a exprimer sur les destinees du "Traite du Maigre", qui saura bien tout seul realiser les plus ambitieuses propheties.
Il m'est bien plus raisonnable de feliciter ici, simplement et vigoureusement, un auteur que j'estime particulierement et qui est reste un ami devoue de tous les efforts professionnels de cette fin de siecle.
Grace a lui, j'en suis sur, nos tables les plus severes connaitront bien des agrements permis et l'art de faire maigre prendra rang hygienique autant que, parfois, meme somptueux.
On parle beaucoup de cuisine vegetarienne depuis quelques annees. En voici les formules les plus delicates et les plus aimables, et de nature a n'eveiller jamais aucun regret. A de telles conditions, c'est plaisir que de renoncer aux joies dites substantielles.
